Whipped Feta with Hot Honey

 

A match made in heaven? We think so. Needy Greedy – aka Charlotte Butterworth – has created this delicious recipe that combines the sweetness of honey with the saltiness of feta. Enjoy as a light lunch or aperitif hour perfectly paired to a glass of chilled Croft.

Ingredients

  • 75g Feta
  • 100g Greek Yoghurt
  • 30g Cream Cheese
  • 1 tsp chili flakes
  • 50g Runny Honey
  • Half a tsp of Apple Cider Vinegar – optional
  • Crisps to serve

 

Method 

  1. Crumble the feta and put in a bowl with the Greek yoghurt.
  2. Beat them with an electric mixer until smooth, then beat in the cream cheese in.
  3. Warm the honey, chili flakes and vinegar (if using) in a pan allow to come to a gentle simmer but do not let boil.
  4. Simmer gently for about 5 mins – Don’t let it boil or it will be too thick!
  5. Sieve if you wish (you can retain the sticky chili flakes to use as decoration) then allow to cool a little.
  6. Pile the whipped feta on a plate, drizzle over the hot honey.
  7. Serve with crisps or crackers and chilled Croft Original.
